  • What is the best wine in the world?

Our head sommelier and wine merchant in Nice Baptiste Salomon answers :

Let's start by asking ourselves what is the best wine in the world - relative to which criteria ?

There are objective and quantifiable criteria for maturity, acidity, sweetness, polyphenols and vitamins, for example. But if we could reduce wine to that, everyone would drink the same wine. Taste is subjective and sentimental. Smells are strongly linked to our memories. A wine can remind you of that time you spent with your father, the one where you met the love of your life, or your mother's lemon pie. Your taste is yours and that is what takes precedent over objective criteria.

Here is a list of some of the most admired and desired producers in the world:

Domaine de la Romanée-Conti (Burgundy, France)

    Petrus (Pomerol, France)

    Jacques-Frédéric Mugnier (Burgundy, France)

    Coche-Dury (Burgundy, France)

Estate of the Counts Lafon (Burgundy, France)

    Eggon Muller (Mosel, Germany)

    Giacomo Conterno Estate (Piedmont, Italy)

    Screaming Eagle (Napa Valley, USA)

Vega Sicilia Unico (Ribera del Duero, Spain)

At Au Coeur des Terroirs we have the opportunity and the responsibility to be the carriers of these nectars and their stories.

    Cheers!

  • How to choose a wine?

There are many factors to consider when choosing a wine, such as the occasion, the dish you are serving, and your own preference. Here are some tips to help you choose the perfect wine:

    • Consider the occasion. If you are having an aperitif with friends, you can choose a lighter and more fruity wine. If you are celebrating a special occasion, or having a gourmet dinner you can choose a more expensive and more sophisticated wine.
    •  Think about the dish you are serving. Some wines pair well with certain dishes, while others do not. For example, red wines go well with red meat, while white wines go well with meat, fish and seafood.
    • Consider your own preferences. Some people prefer red wines, while others prefer white wines. Some people prefer dry wines, while others prefer sweet wines. There is no right or wrong answer, just pick a wine you like.

Here are some examples of food & wine pairings

Champagne & white wine for Cheeses & white meats

    Red Wines for red meats

    Light Red Wines for BBQs

  • How to keep wine ?

Here are some tips for storing wine:

    • Temperature. The ideal wine storage temperature is 12 to 15 degrees Celsius. If the temperature is too low, the wine will congeal and develop ice crystals. If the temperature is too high, the wine will age faster and lose its aromas.
    • Humidity. The ideal humidity level for wine storage is 70-80%. If the humidity is too low, the cork will dry out and let air into the bottle, which will oxidize the wine. If the humidity is too high, the cork will mold and decompose.
    • Shadow. Wine should be stored in the dark. Light can damage wine bottles and alter wine aromas.
    • Stability. Wine should be stored in a stable, vibration-free place. The vibrations can disturb the wine and cause it to age faster.
    • Position. Wine bottles should be stored lying down. This allows the cork to stay moist and keep the bottle watertight.

If you don't have a wine cellar, you can store your wine in a cool, dark place in your home. For example, you can store it in a pantry or basement. You can also use a wine cooler or wine rack.

It is important to regularly check your wine to ensure that it is stored in the correct conditions. If the temperature, humidity, or lighting changes, you may need to move your wine to a different location.
